Edible bamboos
Young bamboo shoots are delicious in salads or as an accompaniment to white meats. Harvest the young shoots when they are between 10 and 20cm long, preferably in the morning. Cut them off at ground level. They should be kept in the fridge and are best eaten the same day, prepare them by first removing the sheaths and then boiling them. All bamboos are edible (but some are very bitter). Planfor has selected for you some of the best varieties for cooking.
